Salmon is a good source of protein, vitamins and minerals (including vitamin B12, selenium, and potassium). It is naturally high in omega-3 essential fatty acids, occurring as eicosapentanoic acid and docosahexanoic acid, which is important for us to consume regularly as our bodies cannot synthesise it itself.
The pesto crust contains basil, garlic and pecans which combine for a flavoursome and crunchy topping which makes this fish really stand out as the main dish. Pecans are an important source of manganese and omega-6 fatty acid.
Serve this dish with sweet potato and steamed vegetables. Enjoy every scrumptious morsel!
Ingredients
1 salmon fillet
1 1/2 cup pecan nuts
2 cloves garlic, roughly chopped
1/2 cup basil leaves
3 Tbsp coconut oil
sea salt
freshly ground black pepper
Method
Step 1
Preheat oven to 200C.
Step 2
Prepare the salmon fillet by checking for bones, then place on a foil lined baking tray.
Step 3
Combine the garlic, pecans, basil, olive oil, sea salt and ground black pepper in a food processor until a it resembles breadcrumb texture. Spoon over the top of the salmon. Bake for 20-30 minutes depending on the size of your fillet.
